Banana + Blueberry Soft Serve Ice Cream (or Smoothie)

Who doesn't love soft serve ice cream? If you're dairy-free & never crave ice cream/soft serve, you're nuts and have more will power than I can ever dream of (or would ever want to dream of!!). With that being said, this is the absolute easiest way to recreate that lovely texture and taste! It's so easy that I feel it to be a cop-out to even call it a 'recipe' or post it on this blog. This is what I like to do when a banana gets too ripe for my picky self to eat normally.

Serves 1 
Prep time: 5 minutes 
Cook time: zilch


1 frozen banana (cut into pieces and put in a ziplock then frozen for a few hours)
1/4C frozen blueberries

1. If you leave your sliced banana in the freezer for longer than 4 hours or so, you'll need to let your banana thaw a bit on the counter for 15-20 minutes. If you don't do that, then you're food processor will hate you and you'll hate it right back. *Make sure you use a food processor and not a blender. The food processor helps keep it a creamy consistency, while the blender makes it more liquidy.
2. Take your frozen banana pieces, (but not solid as a brick! Should not sound like cement is hitting your counter...), and put in your food processor and puree for 3 or so minutes.
3. Once your banana has very few chunks, add your blueberries and blend until the consistency is smooth, thick, and creamy.
4. Revel in your guilt free, scrumptious, all natural soft serve :)

If you'd prefer a smoothie instead of soft serve, just add 1-1.5C canned coconut milk and make it in a blender this time.

I made the soft serve at night, and the next morning I made it as a smoothie... (You can tell because of the light difference in the picture, haha). It's guilt free right?! I'ma eat this shtuff as much as I want. OMG IT'S GOOOOOD.

You could even add your protein powder and/or flax seed! Possibilities are endless!
