Crunchy Sweet Potato Fries

Yay yay! So guess what. These sweet potato fries are CRUNCHY aaand SOFT! Like, they're not soggy and smooshy like probably the several batches of fries you've ever tried to make in your oven. I figured out the secret!  And it only took me 5 batches and my roommate several attempts as well. Just to make this post we had to consume several sweet potatoes over several weeks... tough life I know ;) The exterior is crunchy and the interior is soft. The perrrfect frie. My roommate loved them too. YIPPEE.

Serves: 1-2 people Prep time: 12 minutes Bake time: 40 minutes

1 sweet potato 2 tbsp coconut oil 1/4 tsp salt + pinch

  • 1. Preheat your oven to 500 degrees. Pour water into a pot large enough to hold the sweet potato. Cover the lid and allow water to boil on high heat.
  • 2. Slice your sweet potato into chunky slices. A bit thinner than 1cm thick but not floppy thin. Try to cut all pieces to the same size, you probably won't be able to but do your best. Sweet potatoes are always weird shapes and sizes.
  • 3. Once your water is boiling, remove the lid and carefully dump the fries in. Keep them submerged for 2-3 minutes. At 2 minutes check them by stabbing one with a fork. The fork should easily pierce the frie, but the frie should keep it's shape and no break.
  • 4. Once they have just turned soft, turn the heat off and strain them.
  • 5. Dump the fries in a large bowl and pour 1 tbsp of melted coconut oil over them, along with 1/8 tsp salt. Mix around and add the other 1/8 tsp salt. Make sure they are pretty evenly coated, it might not be perfect but that is OK.
  • 6. Line a baking sheet with aluminum foil and using a brush, evenly distribute 1-2 tsp of melted coconut oil over the entire surface. You want a thin coating, no puddles.
  • 7. Place the fries on the sheet making sure to not overlap any fries.
  • 8. Tear another piece of aluminum foil the size of the baking sheet and using another 1-2 tsp melted coconut oil spread it evenly on the foil. Again, a thin layer. Place the foil oil side down on the fries. The place another baking sheet on top of the foil, so that the baking sheets stack together.
  • 9. Put them in the oven for 20-25 minutes.
  • 10. Take them out and flip each frie and then rotate the pan 180 degrees. My oven is pretty uneven, so the rear and right side of the oven tend to brown and cook food faster than the front and left sides... so rotating is key.
  • 11. Sprinkle a pinch of salt on top, and serve!

Anywayyyy, you should make these now and tell me how you like them! It may seem a little extensive just for fries, but its SOOO worth it!
