Paleo Coleslaw, or Coleslaw Minus the Yucky Processed Ingredients ;)
Super easy and really delicious. A couple of my friends had some and really enjoyed it. Saying that it tastes like authentic homemade coleslaw (whatever that means) and a great balance of sweetness and vinegarness. Perfect to go along side any of your summer BBQ endeavors. Grilled chicken, ribs, pulled pork, smoked brisket, salmon, steak tips, veggies burger (I suppose), cheeseburger, kielbasa...
I wanted to make coleslaw because I had some extra mayo from when I made Chicken Salad + Paleo Mayonnaise. I only had 1/4C mayo, so this recipe is multiplied from the proportion of 2 cups of veggies per 1/4 cup mayo.

3C shredded green cabbage
2C shredded purple cabbage
1C shredded carrots (about 2 carrots)
1C shredded green apple (1 apple)
3/4C + 2tbsp paleo mayo
1 + 3/4tsp mayo
Pinch salt + cracked black pepper
1. If you have a food processor with a shredding attachment, use that to shred all of your veggies.. and apple. If not, finely chop them all by hand. Place the slaw in a large bowl.
2. In a small bowl, mix and combine mayo, apple cider vinegar, and honey.
3. Once the wet ingredients are well combined, pour them over the slaw. Add a pinch of salt and pepper and mix until slaw and mayo are evenly combined.
4. Serve n eat!
